WHAT FOODS CAN WE INCLUDE IN OUR CHILDREN'S DINNERS?

When we think about what we can give our children for dinner, we have to be clear that to maintain a healthy lifestyle they need a complete and balanced diet. Therefore, it is advisable that at dinner time we give our children foods rich in protein and minerals that we have not included in their meal. In this way, we will compensate for the lack of nutrients that our children need for their day today.

To develop a menu according to the needs of children, prepare healthy dinner recipes that contain some of the foods that I present below:

1. Spaghetti with meatballs

An easy and quick recipe, spaghetti with meatballs can be prepared in 20 minutes (or less if you are very fast). To save time we will use a tomato sauce already prepared, but if you prefer a more homemade sauce then you can make your own sauce.

First, we are going to prepare the meatballs. Put the minced meat in a large bowl and add the egg yolks, the chopped parsley, 1 tablespoon of fine salt, and a pinch of ground black pepper. With a fork, mash the meat while the other ingredients mix with it and later add the breadcrumbs and mix again.

Put the oil to heat.

Take a small portion of the dough and make a meatball by rolling the dough between the palms of your hand. Make the meatballs the size you like the most.

Start frying the meatballs. Don't pile too many meatballs in the pan so the oil won't get cold and the meatballs will brown well.

Now put the tomato sauce to heat in a large saucepan (so that the spaghetti will fit later) and add the meatballs (so that they release their flavor in the sauce) and a pinch of dried oregano.

Boil some water and add three small tablespoons of salt, a bay leaf, and the spaghetti. Let it boil until the pasta is just right (it depends on the quality and the type of pasta, read the packaging and try).

When the spaghetti is ready, remove it from the water and add it to the saucepan where the tomato sauce and meatballs are and mix well. If you see that the sauce is very thick, add a little of the water in which you cooked the spaghetti.

2. Chinese chicken fried rice

Cook the rice and peel the carrot, onion and chop them finely and reserve them.

In a thick-bottomed pan or a wok, heat two tablespoons of extra virgin olive oil over high heat, cook the chicken breast fillet with salt and pepper on both sides. Once done, remove it from the pan and chop it into small pieces.

In the same pan, we curdle the beaten eggs, stirring non-stop as when we make scrambled eggs. When they are ready we keep them aside.

Again in the same pan, in the remaining oil, add the chopped vegetables and sauté them.

When the rice is ready, we add the soy sauce to the sauce, high heat, we add the cooked rice, the chopped chicken, and the eggs and sauté it. We taste and, if necessary, add more salt.

Serve immediately, sprinkling with little fresh chives.

3. Shakshuka

The perfect excuse for fried eggs for dinner. No idea if you were looking for an excuse, but this Israeli one-pan dish is very easy, very tasty, and just very nice.

Heat in the olive oil in a frying pan. Fry the garlic, onion, paprika, and ground cumin.

Cut the bell pepper into strips and also cut the tomatoes a bit finer. Add the bell pepper and tomatoes to the pan. Let it simmer gently for a few minutes. Season with a little salt and pepper.

Tap the eggs and put them in the saucepan. Crumble the feta and sprinkle over it. Put a lid on the pan, make sure the heat is low and cook for a few minutes until the eggs are cooked.
