Farinata

Ingredients:

2 cups lukewarm water

1 ½ cup garbanzo bean flour

1 tablespoon salt

3 tablespoons olive oil

1 tablespoon fresh rosemary leaves

Black pepper

Directions

In a bowl, combine the garbanzo bean flour and the two cups of lukewarm water. Whisk until completely smooth. Add salt and olive oil. Give mixture another quick whisk and then let the batter rest for approximately 2 hours.

Preheat the oven to 450°F. Once it's reached temperature, place a medium ovenproof skillet (preferably cast iron) inside for a few seconds. When the skillet is hot, take it out of the oven and drizzle with olive oil. Pour the batter in. Put the skillet back in the oven and bake for 25 to 30 minutes.

When finished, sprinkle some fresh rosemary over the top and dust with pepper. Farinata can be sliced like a pizza and topped with roasted vegetables or topped with a green salad. It will be delicious!

Despite living through such a difficult socioeconomic transition, Daniela recalls her childhood years spent with family in her grandmother's garden and kitchen as among the happiest of her life.

Long before "farm to table" was revived in America, Daniela was enjoying the culinary practice with her grandmother on a daily basis - growing, harvesting and cooking her own healthy and nutritious plant-based dishes. After moving to Los Angeles in 2010 and discovering the Hollywood vegan lifestyle, Daniela incorporated much of what she learned back home into dishes she cooks for her vegan friends.
